So what you really need is practicing, as long as you convince yourself you can't do it "because of the reaction time
Their attacks literally ARE stronger. Each NG cycle they gain damage while your health and posture remain static at the max of 20. NG++ is where you start to feel it and it really kicks in toward the end of NG+3. I got into NG++++ and is the same thing (to finish all the achievement).
